Chicken Kerabu (Chicken
Salad)
Chicken Kerabu is very popular in Malaysia.It is usually made using
fillet chicken, red chili, pineapple chopped,slice cor riander and
other combinations.To make the Chicken Kerabu more tasty, add
limejuice, honey and vinegar.Many like to add some vegetable into
their kerabu like tomatoes to give a slight sour taste.Also can put
any vegetable what you like it.
Where can you find it?Chinken Kerabu can be found at
Malay food stalls or some of the Malay restaurant.
How to make Chicken Kerabu :
Ingredients :
200 grams of chopped fillet chicken
100 grams of slice onions
50 grams of slice red chili
50 grams of slice green chili
100 grams of chopped pineapple
50 grams of sliced corriander
1/2 cup of lime juice
1 tbsp of honey
1/2 tsp of salt
1 tbsp of vinegar
50 grams sliced corriander
Method :
1. Add 1 cup of water with 1/2 tsp of salt in a deep
Arcoflam pot.
2. Add the chicken fillet.
3. Once is cooked, drain the chicken and keep it aside.
4. Pour the juice back to the Arcoflam pot and add the limejuice,
honey and vinegar.
5. Bring the sauce to boil until it reduces to half amount.
6. Cool the sauce.
7. In a serving dish, add the chicken fillet, sauce, sliced onions,
red and green chilies and pineapple.
8. Toss the salad well and keep it in Arcoflam pot.
9. Refrigerate and serve it cold.
