Roti Canai
Walk through any malaysia town mid-morning and the most crowded
eating establishments will usually be where Roti Canai-malaysia's
most popular breakfast meal-is being cook. Its english description,
an unleavened pancake served with dhal, doesn't do it justice. The
best Roti Canai is deliciously light, flaky and crisp, the perfect
vehicle to soak up spicy sauces and curries.
Most Roti Canai makers work at the front of eating
establishment where they can show off their culinary skill. It
takes years of practice to swing out the dough until it is paper
thin, and their theatrical flourishes when tossing the roti look
excessive, but are apparently necessary to ensure the pancake is as
light a possible.
