Sambal Belacan
Sambal is almost the compulsory chilli gravy for Malays. Today, it
is also popular among the Chinese especially in Penang. There are
various methods of preparing them, but all appear to be "red" and
"hot". The basic ingredients are red chillies, shallots,
belacan,lime or belimbing or young tamarind, a bit of sugar and
salt.
Sambal is best eaten with raw vegetables, or ulam in
Malay language. Some people can survive on rice, sambal and ulam
with some grilled fish, especially freshwater fish. This simple
menu is often described as the standard menu of the Malay.
